Cornell Cooperative Extension to Feature the “Golden Goose-fish” of the Northeast at Seafood Expo North America 2024

[Boston, Massachusetts, January 8, 2024] – The American goosefish, better known as monkfish, has a mug only a mother could love, but an out-of-this-world taste worthy of five-star restaurants. With meat that’s mild-tasting and firm, it is often likened to lobster. Cornell Cooperative Extension of Suffolk County (CCE) is excited to announce that it has partnered with monkfish industry members from Maine to New Jersey to present this fantastic, local seafood at North America’s largest seafood event, Seafood Expo North America. The event will take place from March 10 - 12, 2024, in Boston, MA at the Boston Convention and Exhibition Center.
Monkfish is local to the Northeast US where the Expo will be taking place – the largest shares of the monkfish fishery in the United States is caught and processed in Massachusetts and in nearby states, like Rhode Island, Maine, and New Jersey. That means all dishes available for tasting at the CCE booth (#3314) in March will have been locally sourced from Northeast monkfish fishermen, and processed and developed by Northeast seafood companies.
“Monkfish is a very versatile fish. It can be prepared any way you want,” says Tara McClintock, Fisheries Department Manager at CCE.
That versatility in the kitchen will be highlighted by the various offerings CCE and its partners will have available to taste during the event. Monkfish Sliders from Tony’s Fresh Seafood of Rhode Island, and Monkfish Stew from Maine Coast Fishermen's Association, are just two of the offerings to be featured, both of which have already made waves in their respective states prior to the event. CCE will also share more ways to utilize monkfish with attendees, such as the preparation of Japanese ankimo using the monkfish’s liver, and scratch fish broth that utilizes the monkfish’s large head.
“The tail meat [of the monkfish] is just the start,” adds Kristin Gerbino, Fisheries Specialist with CCE. “The whole fish can be utilized to make one great meal after the other.”
“Getting the word out and doing these tasting events helps people try new things and realize all of the delicious, local options available to them,” McClintock adds. “When people eat local seafood, they support their local fishermen and businesses. Monkfish gives so much potential to do that right here in the Northeast.”

In this unique class, fisheries experts from Eating With The Ecosystem and Cornell Cooperative Extension's Marine Program will teach you everything you want to know about the fish, the fishermen and the many benefits of choosing local seafood while expert chefs teach you how to turn fresh fish straight from the sea into fabulous meals you can share with your friends and family!
The best part is that 100% of the ticket price goes towards providing local seafood for families in need (25 meals per ticket)!
The October 2nd online class will be led by Chef Todd Mitgang of Crave Fishbar in New York City as he shows you how to prepare Seared Black Sea Bass with Tahini Spiked Beluga Lentils, Roasted Delicata Squash and Broccoli Rabe.
What to expect at a "Cook a Fish, Give a Fish!" class
1. A few days before the class, you will receive a recipe with a list of ingredients and tools you will need to prepare the meal from home, as well as the link to join virtually via Zoom.
2. You are responsible for sourcing all of your own ingredients, including the fish. Fisheries experts from Cornell Cooperative Extension's Marine Program and Eating With The Ecosystem are available and happy to provide advice on sourcing the fish (and substitutions, if needed).
3. On the evening of the event, gather your family, partners, roommates, friends, or pets (or kick them all out and enjoy some well earned time to yourself). These classes are also a great way to connect with fellow seafood lovers from the comfort of your own home. Assemble your ingredients, grab your favorite beverage and log into a Zoom video class.
4. Classes are facilitated by Kate Masury of Eating with the Ecosystem and Kristin Gerbino from Cornell Cooperative Extension. Culinary instructions are provided by an expert guest chef (Todd Mitgang of Crave Fish Bar). This is a social setting, and you are invited to relax and interact!
5. As the chef cooks in his or her kitchen, you follow the same steps in your kitchen. And voila! Your local seafood meal is ready to eat!
6. 100% of the proceeds from ticket sales are used to purchase local seafood for people in need though East End Food Institute in Southampton NY, African Alliance of RI, Women's Refuge Care, Narragansett Indian Tribe, Refugee Dream Center, Sunrise Forever Inc., George Wiley Center and the Commercial Fisheries Center of RI. Over 9,040 meals have been provided so far!

We are excited to announce our 2022 Back to the Bays Lecture Series that will kick off on April 19 from 6-8pm at the GHB Peconic Location! @greenportbrew Beginning 4/19 and then the 1st Tuesday of each month for the rest of 2022, you can meet the Cornell Cooperative Extension Marine Team and find out how you can get involved in important efforts to give back to the bays! We will have new lectures the first Tuesday of every month about the work of CCE Marine Program happening right at Cedar Beach in Southold! To promote our Back to the Bays Membership Program, if you join our program you will receive a complimentary beer to enjoy during the lecture! The December 5th event will be led by Chef Tom Rutyna. Chef Tom will be teaching guests how to prepare “Pan Roasted Striped bass with Sweet and Sour Heirloom Tomatoes and Whipped Pumpkin”. Striped bass is an abundant species and important fishery in our local waters during the fall months. This unique and flavorful preparation pairs seasonal local produce with the sweet, mild fish and is a perfect dish to prepare while enjoying the cooler weather.
