Calamari Salad
Serves 4
INGREDIENTS
- 1 lb. of cleaned Longfin squid 
- 4 tsp. - garlic minced 
- 2 tsp. – fresh parsley (a few pieces cut up) or dried parsley 
- ¼ cup olive oil 
- Juice from 1 fresh lemon 
- ¼ tsp. crushed red pepper 
- ¼ tsp. salt 
DIRECTIONS
- Boil water, then add the squid. 
- Boil for 7 minutes. 
- Drain and cool squid with an ice bath. 
- Once cooled, cut squid in ½ inch rings. 
- Put all other ingredients in a bowl and mix together. 
- Add the squid with the ingredients and mix. 
- Ready to serve or refrigerate until cold (the longer you refrigerate the better the flavor as it marinates)
