Calamari Salad

Serves 4

INGREDIENTS

  • 1 lb. of cleaned Longfin squid
  • 4 tsp. - garlic minced
  • 2 tsp. – fresh parsley (a few pieces cut up) or dried parsley

 

  • ¼ cup olive oil
  • Juice from 1 fresh lemon
  • ¼ tsp. crushed red pepper
  • ¼ tsp. salt

 

DIRECTIONS

  • Boil water then add the squid
  • Boil for 7 minutes
  • Drain and cool squid with an ice bath
  • Once cooled cut squid in ½ inch rings
  • Put all ingredients in a bowl and mix together
  • Add the squid with the ingredients and mix
  • Ready to serve or refrigerate until cold (the longer you refrigerate the better the flavor as it marinates)
