Miso Glazed Sea Bass

Serves 4

Ingredients

For the Fish

. 1 1/2 lb. black sea bass (or other mild, white fish)

. 1/2 lemon (juiced)

. 1 teaspoon salt

. 2 teaspoons vegetable oil (to coat pan)

. 2 tablespoons miso (white, not sweet)

. 2 tablespoon honey

. 1 teaspoon soy sauce

. 1 tablespoon fresh ginger (peeled and minced)

. 1 small clove garlic (minced)

For the Rice

. 2 cups black rice

. 4 cups water

. 4 scallions (thinly sliced)

. 1 tablespoon toasted sesame oil

. salt, to taste

For the Vegetables

. 2 tablespoon extra virgin olive oil

. 3 cloves garlic (minced)

. 1 bunch leafy green kale (stems removed and roughly chopped)

. 4 cups baby spinach (or 5oz box)

. 1/4 cup water or apple juice

. 1 teaspoon lemon juice (fresh squeezed)

. 1/4 teaspoon red chili pepper flakes (optional)

. salt, to taste

Tools Needed

. Large saute pan

. Medium pot with cover

. Small bowl

. Baking dish

Instructions

For the Fish

1. Preheat oven to 375

2. Coat fish with salt and lemon juice, rinse under water and pat dry with a paper towel. Place in oiled baking dish

3. In a small bowl mix miso, honey, soy sauce, ginger and garlic so that it becomes a paste. Spread evenly over fish

4. Bake uncovered for 15-20mins, then finish under broiler for 5-7mins

For the Rice

1. Add rice to pot with water and cook covered on medium until boiling, then reduce to simmer (still covered) and cook for about 20mins or until done

2. Remove from heat and mix with scallions and oil, then season with salt

For the Vegetables

1. Heat oil on medium in a large saute pan. Add garlic and cook for 30 seconds

2. Add kale and cook until slightly wilted, then add spinach and liquid. Cook for another 2mins or until greens are soft. Add red pepper, lemon juice and salt
